Summer Berry Bars
Alright folks, it's been too long! Finally, a recipe and one that you wont want to miss out on!
These summer berry bars are absolutely delicious and I have put off making them for far too long. After having some way too good raspberry bars from our local Whole Foods, I vowed to attempt to recreate them (with less butter and more fruit of course) and after quite a bit of research I decided to do it my way. Feel free to change up the filling and anything you think may be a lovely addition.
Summer Berry Bars
Crust/Topping:
1 egg
1 cup softened butter (Yes, it is less than those bought from the grocery stores!)
1 tsp vanilla
1 cup brown sugar
1 1/2 cups flour
1 1/2 cups rolled oats
1 tsp baking powder
1/2 tsp salt
A pinch of cinnamon
A handful of sliced almonds, slightly crushed (optional, but fantastic!)
Filling:
1 1/2 cups fresh blueberries
1 cup chopped strawberries
1/4 cup seedless raspberry jam
1 tsp lemon juice
1 tsp sugar
Preheat your oven to 350 degrees. Blend all crust ingredients in your mixer with a dough paddle. Set aside 1/4 of the dough and spread the remaining 3/4 into a 9x13 pan.
Place all filling ingredients in the bowl of your mixer and attach a balloon whisk. Beat on the lowest setting until most of the berries have been crushed.
Spread the filling over the first layer of crust and crumble the remaining dough into small pieces over the berry mixture. Bake uncovered for 50-60 minutes, until the crumbles turn golden brown. Enjoy for breakfast or even top with some vanilla ice cream for an amazing summery dessert!
