Cobbler for all! Or not.


I must start out by saying that I only got a few bites in of this cobbler and the rest was devoured by my boyfriend in a matter of hours. He ate the whole damn thing. So naturally, I have to assume it was amazing.  The filling was jarred (I received the pie plate and filling for my birthday!) but the crust was homemade. The recipe is as follows. Be sure to set some aside for yourself!

Cobbler topping
6 tbs butter (melted and cooled)
1 egg
1/2 cup milk
1 tsp vanilla
1/2 tsp cinnamon
1 1/4 cup whole wheat flour
1/3 cup sugar
1/8 cup brown sugar
2 tsp baking powder
1/8 tsp salt
Brown sugar for sprinking

Mix all wet ingredients in a stand mixer. In another bowl sift together the dry ingredients. Add the dry ingredients to the wet until a sticky dough forms. Spoon the dough onto a filling of your choice.  Sprinkle with brown sugar. Bake at 350 degrees for 45 minutes.
